Sushki 101
Ingredients:

Dough:

2 1/2 cups (300g) all-purpose flour

1/2 cup (110g) water
-
1 large egg
-
1 tsp salt
-
1 Tbsp. sugar for the dough
-
1 Tbsp. poppy seeds (optional)

To boil:
-
2 Tbsp. sugar for water
-
5 cups water

Directions:
​
1. Mix together all dough ingredients in a bowl. It is a thick dough so you may need to use your hands instead of a whisk.

2. Cover the bowl with a kitchen towel and let rest for 25 minutes at room temperature. At this time also preheat the oven to 350 F.
​
4. Set up the pot of sugar water and bring to a boil.
​
3. Once the dough is well rested you can begin shaping it into little rings. If you want to be very specific then make each piece 15 g, but by eye its about the size of a quarter. Take each little piece and roll it into a 10 cm long string then form a ring by attaching the ends to each other.
​
4. In batches, boil the sushki for 30 seconds to 1 minute then quickly remove and place on a baking sheet.
​
5. Bake for 15-20 minutes or until golden brown.
