Medovik is a classic Russian honey cake with multiple biscuit layers. Legend has it that the first medovik honey cake was created in the 1820’s by a personal chef for the wife of Russia’s czar Alexander I.

Sugar was not always readily available in Russia; therefore, honey became a popular ingredient. Honey preservative proprieties also made it a popular ingredient in Russian cooking.

The cake gained popularity during Soviet Union because the ingredients were obtainable during product shortages.
