Russian cuisine is intricate and full of history dating all the way back to the 10th century, although it was not until the 15th century that the cuisine really became diverse. Due to Russia's large geography it has many ethnic groups, each contributing their own traditional dishes. This website focuses on pastries and tea time desserts.
Russia's farmers produce high amounts of grains like rye, oat, wheat, barley, and buckwheat. Therefore, most of their dishes are based on grains. Tea was not introduced to Russia until the 17th century when the Tsars tried becoming more sophisticated and threw feasts. Their banquets had a variety of foods, so one can only imagine their tea time had a variety of desserts. It was not long until tea was common for all households, not only the rich.
